The apple is so universal to baking that Apple Pie is known as an All-American standard.÷ For convenience and your own individual apple pies, try this recipe for Apple Pie Pockets.÷ These little gems are perfect for lunchboxes and picnics as well as for a grab and go treat.÷ The Apple Filled Oatmeal Cookies offer a fresh take on another familiar American icon--the oatmeal cookie.
APPLE PIE POCKETS
1 pkg refrigerator pie crust
3 apples, peeled, cored, and thinly sliced
1/3 cup sugar
2 tbsp flour
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tbsp butter
milk
1/4 cup sugar 1/2 tsp cinnamon combined in a small bowl
Preheat oven to 400 degrees.
Cut each circle of pie crust into four wedges.÷ In a medium bowl, mix together the sugar, flour, cinnamon, and nutmeg.÷ Toss apple slices with the mixture until slices are evenly coated.÷ Place 6 to 8 mixture-coated apple slices on half (just off the middle) of the pie crust wedges.÷ Dot slices with butter and fold the crust up over the slices.÷ Seal the open edges with a fork dipped in milk.÷ Make tiny slits in top for air holes.÷ Brush with a little milk and sprinkle the cinnamon sugar over the milk.÷ Repeat the process with the remaining wedges.÷ Bake on a lightly greased cookie sheet until golden brown or about 15 to 18 minutes.

Note:÷ This pie pockets are also great served warm with ice cream.
APPLE FILLED OATMEAL COOKIES
1 cup finely chopped apples
1/4 cup raisins
1/4 cup chopped pecans
1/2 cup granulated sugar
2 tbsp water
1 cup brown sugar
1 cup butter
2 eggs
1/2 cup milk
2 cups flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp cloves
2 cups oatmeal
Preheat oven to 375 degrees.
In a saucepan, combine apples, raisins, pecans, granulated sugar, and water.÷ cook and stir this mixture until thick and apples are tender, about 10 minutes.÷ Set aside.
Cream the brown sugar with the butter then beat in the eggs.÷ Sift together the flour, baking powder, cinnamon, and cloves.÷ Add the dry ingredients alternately with the milk to the creamed mixture.÷ Stir in the eatmeal.÷ Set aside 3/4 cup of the dough.÷ Drop by teaspoon onto cookie sheets.÷ Make a small depression in each cookie and add a small amount of the apple mixture to the depressed spot.÷ Top apple mixture with a small amount of the reserved dough.÷ Bake for 10 to 15 minutes at 375 degrees until cookies are lightly browned.
