Dinner in Minutes Featuring Chicken Cheesie Pizza

Are you in a hurry and on a budget?  This Chicken Cheesie Pizza allows you to get dinner on the table quickly, is economical, and it is healthy.  Serve it with a salad, we recommend our Romaine Lettuce Salad which you can assemble while the pizza bakes, and you have a tasty meal in a matter of minutes. CHICKEN CHEESIE PIZZA 1 tube (10-oz) prepared pizza crust dough 1/2 lb boneless, skinless chicken breast 1/4 tsp fresh ground black pepper 1/4 cup lite salad dressing (Miracle Whip type) 1/4 cup low-fat grated Parmesan cheese 1/2 cup low-fat ranch dressing 8-oz pkg shredded mozzarella cheese Preheat oven to 425 degrees. Press the dough onto a pizza pan or a cookie sheet that has sides and has been sprayed with nonstick cooking spray.  Set aside. Microwave the chicken breast about 2 minutes or until the juices run clear.  Drain juices from the chicken.  Cut chicken into tiny pieces, or shredd.  Sprinkle with the pepper and set aside. Mix the salad dressing, ranch dressing and Parmesan cheese together.  Spread the mixture over the pizza crust.  Place the chicken over the salad dressing mixture.  Top with the mozzarella cheese.  Bake at 425 degrees for 12 to 15 minutes or until the crust is golden brown. ROMAINE LETTUCE SALAD 1 head romaine lettuce, cut or torn into 1-inch pieces 1/2 cup sliced ripe olives 1/2 cup sliced green olives 1/2 cup finely chopped white onion 1/2 cup finely chopped red onion 1/2 cup shredded mozzarella cheese 1/2 cup bottled Italian salad dressing 1 tbsp dry Italian salad dressing mix 3 medium tomatoes, cut into wedges In a large salad bowl, combine the lettuce, olives, onions, and cheese; toss lightly.  Cover and refrigerate.  Before serving, pour the Italian dressing over the salad, sprinkle with the dry dressing mix, and garnish with the tomato wedges.
