New and Different Ways to Use Leftover Turkey

If you have leftover turkey and would like to try some different ways to use it, here are some suggestions for you. Give your leftover turkey a Tex-Mex flair by using it in this Chicken or Turkey Doritos Casserole. The Doritos add crunch and the vegetables add color. Or how about some barbecue turkey sandwiches? Both of these recipes will allow you to use up your turkey without your family grumbling about re-eating the Thanksgiving dinner! CHICKEN OR TURKEY DORITOS CASSEROLE chicken or turkey meat equal to 1 deboned chicken, cooked and cubed 1 can (10 3/4-oz) cream of celery soup 1/4 cup finely chopped onion 2 cups shredded cheddar cheese 1/2 of an 11-oz bag of Nacho Cheese Doritos, slightly crushed 1 can (8-oz) mixed vegetables, drained (if desired) 1 tbsp water Preheat oven to 300 degrees. Spray a 3-quart casserole dish with nonstick cooking spray. In a mixing bowl, combine all the casserole ingredients and mix well. Pour the mixture into the prepared baking dish. Cover and bake at 300 degrees for 35 minutes or until hot and bubbly. OLD FASHION BAKED BARBECUED CHICKEN OR TURKEY leftover turkey or chicken equal to about the meat of a 3 lb chicken 2 tbsp canola oil 1/2 cup onion, chopped 1/2 cup celery, chopped 1/2 cup catsup 1/3 cup water 2 tbsp lemon juice 1 tbsp brown sugar 1 tbsp Worcestershire sauce 1 tbsp vinegar 1 tbsp mustard salt and pepper 3 lb broiler, cut up In a medium skillet, cook the onion and celery until crisp tender in the oil. Place the turkey or chicken that has been diced or shredded in a baking dish. Add the catsup, water, lemon juice, brown sugar, Worcestershire sauce, vinegar, mustard, salt and pepper to taste to the celery and onion. Simmer over low heat for 15 minutes. Pour sauce over the turkey or chicken. Bake in a preheated 325 degree oven for45 minutes to 1 hour. Baste with sauce three or four times during baking. Serve on whole-wheat buns with your favorite condiments. You can also combine all this in the slowcooker or crockpot and let heat until bubbly and hot. Note: If you have lots of leftover rice or mashed potatoes, you could serve this recipe over them rather than on buns. Enjoy! Ò
