Spicy Pumpkin Seeds

Spicy Pumpkin Seeds are deliciously addictive! Make a double or triple batch to have on hand for nibbling. Makes about 1/2 cup: Ingredients:- 1 garlic clove, minced 1 tablespoon olive oil 2 teaspoons cummin 1 teaspoon sweet paprika 1/2 teaspoon cayenne pepper 1/2 cup shelled unsalted pumpkin seeds (pepitas)* 1 teaspoon coarse (kosher) salt Step 1: Preheat the oven to 400 degrees. In a small skillet, cook the garlic in the oil over low heat for about 5 minutes without browning. Strain the oil through a fine sieve and discard the garlic. Return the garlic-flavored oil to the skillet and add the cumin, paprika and cayenne. Cook over low heat, stirring occassionally, until fragrant for about one minute. Step 2: Place the pumpkin seeds on a baking sheet. Scrape the spice mixture over the seeds, sprinkle with the salt and toss to coat evenly. Spread the seeds in a single layer and bake in the oven for about 5 minutes or until they turn light brown. The seeds will pop up and dance while cooking. Store the seeds in an airtight container to maintain taste and crisp.
